Malai Pyaz Recipe

Malai Pyaz is a very simple ,yet delicious sabji made with malai or cream and the onions as two main ingredients.This is a recipe from Rajasthani cuisine.A must try recipe as you don’t need any vegetables or too much of spices to cook this.Makes a good combination with any type of roti or Indian flatbread.Do give it a try !
Ingredients:
Oil 2 tsp
Cinnamon 3 to 4 small sticks
Cloves 3 to 4
Cumin seeds 1 tsp
Garlic 1 tbsp , finely chopped
Green chillies 3 to 4 , thin slit
Onion 3 , roughly chopped
Tomato 2 , smooth paste
Cumin powder 1/4 tsp
Coriander powder Half tsp
Turmeric powder 1/4 tsp
Red chilli powder Half tsp
Salt As per taste
Garam masala powder 1/4 tsp
Malai / fresh cream Half cup
Coriander leaves 2 to 3 tbsp , finely chopped

Method:
Heat 2 tsp of oil in a pan and add 3 to 4 small sticks of cinnamon,3 to 4 cloves and 1 tsp of cumin seeds.Roast them well in oil.
Add 1 tbsp of finely chopped garlic and sauté.
Further add thin slit green chillies and 3 medium sized onions that are roughly chopped.
Sauté for a while and cover the pan with a lid.Cook on low flame for 5 minutes.
Grind 2 tomatoes into fine and smooth paste and this to the cooked onion in pan.
Mix well and cook again on low flame for 2 minutes.
Now add all the spice powders one after the other.Add quarter tsp of cumin powder, half tsp of coriander powder, quarter tsp of turmeric powder, half tsp of red chilli powder and salt as per taste.Mix well.
Add quarter tsp of garam masala powder and cook for 2 more minutes on low flame.Finally add malai or fresh cream and mix well.Make sure to cook on low flame throughout.Finally add 2 to 3 tbsp of finely chopped coriander leaves and mix well.

Serve with roti/chapati/paratha or poori.
