Once in a while, a break from the usual pakoda or bhajjiya to make evening tea time more interesting ! especially for kids .. Cheese corn balls are an interesting snack to munch on with a cup of tea or coffee.You can also prepare and serve them for kitty parties or birthday parties.
These crispy cheese corn balls can be either shallow fried, baked or deep fried.I have followed deep frying method as it gives a better texture and taste compared to other two methods.Lets get into the recipe.I would also suggest you to go through our other instant evening snacks recipes like Kolhapuri palak bhajjiya,gulgule recipe and 2 easy and light makhani snacks.
INGREDIENTS
2 boiled & peeled potatoes
50 grams Mozzarella cheese
2 tbsp Capsicum,finely chopped
2 tbsp Sweet corn kernels,boiled
1 tbsp Zweer corn kernels, boiled and mashed
1/2 tsp Pepper corns, crushed
1 tsp Red chilli flakes
1/2 tsp Oregano
1.5 tbsp Corn flour
3 tbsp Maida
1 cup Bread crumbs
7 Mozzarella cubes
2 cups Oil ,to fry the cheese balls
As per taste Salt
METHOD
Into a mixing bowl add boiled, peeled and grated potato along with grated mozzarella cheese,finely chopped capsicum, boiled sweet corn kernels,boiled and mashed sweet corn kernels,crushed pepper corns,dry red chilli falkes,oregano,half tbsp of corn flour, 1 tbsp of maida and salt all as per the measurements given above.Mix well and form a soft dough out of this mixture.
In a separate bowl take 2 tbsp of maida and add 1 tbsp of corn flour to it.Mix well and add about half cup of water.Mix again.Remove lumps if any.Set this slurry aside.
Spread bread crumbs on a plate.
Now,make balls out of the prepared dough.About 7 to 8 balls of same size.
Take a small cube of mozzarella cheese and stuff it inside each of the cheese corn ball.Seal it completely.
Firstly,dip the cheese stuffed corn ball in the maida-corn flour slurry and coat it well with the batter.
Next roll the batter coated ball over the bread crumbs spread on the plate.
For extra crispiness you can repeat the process of dipping the ball in batter and bread crumbs once again.
Heat oil in a wok or kadai, and drop the cheese balls in oil.
Fry on medium flame on all sides until the balls turn crisp outside.
Serve these delicious crispy cheese corn balls with tomato ketchup.
NOTES
A perfectly crispy cheesy corn balls should have an even spread of melted cheese inside.Make sure the dough is well combined before making balls.
Stuffing cheese cubes inside the balls is optional.
