Healthy Broccoli Salad Recipe
Delicious, healthy broccoli salad recipe made with simple ingredients like fresh blueberries, carrots, sweet dried apricots, almonds and sunflower seeds. This easy, dairy free broccoli salad has no mayo, is tossed in a light tahini dressing, and is perfect for summer parties or meal prep!
Serves 4
Produce
1 1/4 cups Blueberries, fresh
5 cups Broccoli florets, fresh
1/2 cup Cilantro, fresh
1/4 cup Flat leaf parsley
1 Garlic clove
1/2 Lemon
1/3 cup Red onion
1 cup Shredded or matchstick cut carrots
1/2 cup Turkish apricots, dried
Condiments
3 tbsp Drippy tahini
1/2 tbsp Maple syrup, pure
Baking & Spices
1 Black pepper, Freshly ground
1/4 tsp Salt
Nuts & Seeds
1/2 cup Almonds, toasted
1/4 cup Sunflower seeds, roasted
Liquids
2 tbsp Water
